After fat and oligosaccharide removal, powd. green coffee was extd. with 2N HCl. Polysaccharide (I) was pptd. with 95​% EtOH; yield: 0.9​% from Coffea arabica, 1.5​% from C. robusta. Acid hydrolysis of I and quant. sepn. yielded 10​% rhamnose, 30​% arabinose, 29​% mannose, and 19​% galactose. The order of liberation during acid hydrolysis was arabinose and traces of galactose in 15 min., rhamnose and traces of mannose in 45 min.; oligosaccharides appeared within 30 min. and increased with time. Acid-​sol. I differs from water-​sol. I in rhamnose and mannose content and resembles NH4 oxalate-​extd. I.
